Lo ammetto, questa ricetta è di ieri, quando il clima sembrava autunnale e invogliava a mangiare qualcosa di caldo. Oggi è tornato il caldo afoso e siamo di nuovo in estate. Estate che con queste temperature mi fa venire voglia di scrivere, perché sarebbe l’ambientazione ideale di mille storie più o meno grottesche… ma poi non scrivo mai niente, e cucino… eh sì, so che sembra impossibile dato che non sto pubblicando niente da un po’, ma è perché sono totalmente assorbita dai preparativi per il negozio e fino a venerdì lavoro ancora in ufficio (-3!!!) ma cucino sempre e comunque. Questa ricetta è per tutti quelli che si lamentano che per mangiare bene vegano servono ingredienti esotici: non è assolutamente vero! Ho usato ingredienti italiani per una ricetta messicana, perché in fondo tutto il mondo è paese! L’ispirazione è nata da Alessia che mi ha ricordato di avere delle lenticchie in casa e dall’Orso Barbuto che aveva voglia di cibo messicano. Tutto il resto è venuto da sè. I quantitativi non sono precisi proprio perché è nato tutto un po’ per caso e indicherò alcune note per le varie sostituzioni che ho fatto. Ovvio che se avete in casa gli ingredienti originali, potete fare una vera ricetta messicana, ma vi garantisco che anche questa versione KMzero è ottima e penso la ripeterò spesso, anche perché le lenticchie la rendono molto più rapida!
Ingredienti:
200 g lenticchie ammollate per 20 minuti (oppure fagioli neri o red kidney)
vino rosso
2 spicchi d’aglio
1 cipolla bianca
1 peperone verde (oppure jalapeño privato dei semi)
1 tazza di passata di pomodoro (oppure pomodoro fresco o 3 cucchiai di concentrato)
acqua
sale
peperoncino (non necessario se si usa jalapeño)
mix spezie messicane (oppure coriandolo, paprika, cumino, pepe, peperoncino)
succo di limone (o di lime) – FACOLTATIVO
prezzemolo tritato (o coriandolo fresco)
olio
Procedimento:
tritare aglio e cipolla e far soffriggere con un po’ d’olio. Aggiungere le lenticchie precedentemente ammollate e irrorare con vino rosso (circa un bicchiere abbondante) e lasciare evaporare. Aggiungere acqua fino a coprire le lenticchie e lasciare sobbollire fuoco lento senza coperchio. Quando l’acqua è stata assorbita, aggiungere il pomodoro, il peperone a pezzetti, il sale e lasciare cuocere ancora. Se si asciuga troppo, aggiungere acqua e regolare di sale. A cottura quasi ultimata (mezzora circa) aggiungere le spezie, il succo di limone (2 cucchiai) e il prezzemolo tritato (mi raccomando, usate anche i gambi!).
Green-go tips:
- il succo di limone è facoltativo ma ve lo consiglio per aumentare la sapidità del piatto senza aggiungere troppo sale
- in mancanza di coriandolo fresco (qui da me è difficile da trovare), il gambo del prezzemolo è un ottimo sostituto
LENTILS THE MEXICAN WAY
I have to admit I cooked this recipe yesterday, when it looked like fall and I was craving to eat something warm. Today it’s hot again and summer is back. Such a weird summer this year… this hot weather makes me want to write, as it would be the perfect setting for a thousand grotesque stories… and although I never write anything, I still cook! Oh yeah, I know it sounds incredible ‘cause I haven’t been posting for a while… the truth is that I’m totally overwhelmed by the works going on at my store and I’m still working full time at the office until Friday (-3!!!), but I keep on cooking anytime I can. This recipe is for those who think that a plant-based menu should be full of exotic and expensive ingredients to turn out tasty: that’s totally wrong! I used Italian ingredients for a Mexican dish, and I got the inspiration from Alessia, who reminded me I had some lentils at home, and from my Bearded Bear, who was craving to eat Mexican food. The indicated amounts are not very precise right because I started cooking without weighing. I’ll write some notes in brackets concerning the replacements I made: should you have some of the original ingredients in your cupboard, feel free to stick with the Mexican recipe, however I can assure you that this version with local (for me) food is tasty as well and I think I’ll do it over and over again – and it doesn’t take so much time as if using beans!
Ingredients:
200 g lentils soaked about 20 minutes (or black beans or red kidney beans)
1 full glass red wine
2 garlic cloves
1 onion
1 green pepper (or jalapeño without seeds)
1 cup tomato sauce (or fresh tomato or 3 Tbsp tomato paste)
water
salt
chilly (don’t add it if you use jalapeño)
Mexican spices mix (or coriander, paprika, cumin, pepper, chilly)
lemon juice (or lime juice) – OPTIONAL
chopped parsley (or fresh coriander)
oil
Procedure:
chop garlic and onion and cook them with a little oil, then add the previously soaked lentils and a full glass of wine. Once the wine is gone, add enough water to cover the lentils and let cook at medium heat uncovered. After the water has been absorbed, add the tomato sauce, the green pepper, salt and let cook. If it gets too dry, add some water and eventually some salt too. When it’s almost done (after about 30 minutes), add the spices, 2 Tbsp lemon juice and the parsley (use its stems too!).
Green-go tips:
- lemon juice is optional, however I suggest it in order to get a savory dish without adding too much salt
- since fresh coriander is not so easy to be found here where I live, using parsley stems (not just the leaves) helps recalling that particular taste
