Qualche settimana fa ho comprato le proteine di canapa non perché sia una fan dei superfoods, anzi… ma solo perché avrei voluto partecipare ad un contest internazionale di ricette crudiste dove appunto si dovevano includere alcuni supercibi. Avrei potuto optare per il classico olio di cocco e sbizzarrirmi su un dolce, ma ovviamente le cose facili non mi attirano e l’idea si è subito indirizzata su un’opzione salata. Il premio era un blender che mi servirebbe tanto in questo momento: non ci speravo per niente, ma tentar non nuoce! 😉 Complice il poco tempo a mia disposizione (ho scoperto la gara a una settimana dalla fine) e il fatto che le proteine di canapa qui si trovino solo online, alla fine non ho partecipato, ma l’idea mi è rimasta in testa – anche perché altrimenti come potrei usare diversamente queste proteine??? L’ho semplificata molto rispetto alla versione chic che avrei voluto realizzare, dato che nel frattempo vari ingredienti sono stati utilizzati per altri scopi, ma eccone una versione mini! P.S.: la base è per una tortina, il ripieno per almeno tre, ma quello che avanza lo potete usare per delle tartine modello Barbie!
Ingredienti per la base:
- ¼ cup proteine della canapa
- ¼ cup farina di semi di lino
- 1 cucchiaio olio di semi sesamo
- 1 cucchiaio acqua
- sale
Ingredienti per il ripieno:
- 45 g barbabietola pelata
- 1 cup noci di macadamia
- 2 cucchiai lievito alimentare
- 2 cucchiai succo di limone
- 2 cucchiaio succo d’arancia
- 2 cucchiai acqua
- 1 cucchiaino olio EVO
- sale
Decorazione:
- carote
- cipolla rossa
- paprika affumicata
Procedimento:
mettere in ammollo le noci di macadamia per qualche ora. Preparare la base mescolando e farine con un pizzico di sale e l’olio. Formare delle briciole, aggiungere l’acqua e modellare l’impasto in una formina del diametro di 8 cm. Mettere nell’essiccatore a 40° per almeno 4 o 5 ore. Affettare le carote e la cipolla, ungerle leggermente con olio EVO e aggiungere paprika affumicata. Lasciare essiccare insieme alla base. Affettare la barbabietola e condirla con sale e 1 cucchiaio di succo di limone. Disporre le fette su un piatto, coprire con pellicola e lasciare riposare. Adesso fate quello che volete: ballate, cantate, leggete, andate a camminare… insomma, fate passare qualche ora! Dopo 4 orette, frullate le noci di macadamia con lievito alimentare, succo d’arancia e di limone, sale e barbabietola strizzata. Otterrete un formaggio cremoso fuxia! Prelevate dall’essiccatore la base, riempitela con il formaggio cremoso e decoratela con le verdure essiccate.
RAW beetroot savory tart
Although I’m not a supporter of super-foods, some weeks ago I bought hemp proteins to take part in an international contest of raw recipes including super foods. I could have chosen to use coconut oil to make some crazy sweet pie, but you know, I’m not really into easy stuff that much, so I headed my ideas for a savory dish. The prize was a blender – that I desperately need right now. I didn’t expect to win at all, but you know, at least you have to try! 😉 Due to the lack of time – I found out about the contest only one week before the end of it – and the fact that I had to order the hemp proteins online, I didn’t make it to participate, but the idea stayed on my mind – how could I use hemp proteins otherwise? I made it more simple compared to my first idea, even because in the meanwhile I have used many of the ingredients I needed. So, here’s a very easy version! P.S.: the base serves one, whereas the filling is enough for at least 3 tarts, but you can use the leftovers for some Barbie-style appetizers!
Ingredients for the base:
- ¼ cup hemp proteins
- ¼ cup linseed flour
- 1 pinch salt
- 1 Tbsp sesame oil
- 1 Tbsp water
Ingredients for the filling:
- 45 g peeled beetroot
- 1 cup macadamia nuts
- 2 Tbsp nutritional yeast
- 2 Tbsp lemon juice
- 2 Tbsp orange juice
- 2 Tbsp water
- 1 tsp extra-virgin olive oil
- salt
Decoration:
- carrots
- red onion
- smoked paprika
Procedure:
soak the macadamia nuts and put aside for some hours. Prepare the base mixing the flours with salt and oil. Work into crumbles and add water. Shape the dough in a 8 cm diameter mould and put it in the dryer at 40°C for at least 4-5 hours. Slice carrots and onion, grease them with olive oil and add some smoked paprika. Put into the dryer together with the base. Slice the beetroot, add some salt and 1 tablespoon lemon juice. Put on a plate, wrap it up and let rest. Now, do whatever you like: dance, sing, read, take a walk… take your time! After 4 hours, blend the nuts with nutritional yeast, orange juice, lemon juice, a pinch of salt and the beetroot, previously squeezed. You’ll get a fuchsia “cheese”! Remove the base from the dryer and place it on dish, fill it with the cream and decorate with the dried carrots and onions.
